乳酪餡體
- 新鮮檸檬汁 - 0.2 cup
- 吉利丁片 - 5 小張 (2.75tsp)
- Cream cheese(室溫放軟) - 1.5 lb
- 糖 - 0.75 cup
- 鹽 - pinch
- Heavy Cream(室溫) - 1.25 cup
餅底做法:
- 烤箱預熱到攝氏175度
- 將餅乾、融化的奶油和檸檬屑,倒入食物處理機中打碎拌勻
- 準備一個8吋蛋糕活動模,將烘培紙剪成圓形,放在底部
- 將餅乾屑倒入模中,緊實壓平
- 放進烤箱烤 8 分鐘,取出,趁作乳酪餡時放涼

乳酪餡做法:
- 吉利丁放入水中(不能使用冰水),約2分鐘泡軟,撈起,擠掉水分
- 泡軟的吉利丁放入檸檬汁中,用低溫微波30秒至稍微起泡(確認吉利丁完全溶解)
- Cream cheese、糖和鹽放入大盆中,用攪拌器拌至完全平滑
- 慢慢加入 Heavy cream打至有點蓬鬆感
- 將吉利丁檸檬汁倒入盆中,混合均勻,質感要類似滑順的絲綢般
- 倒入放涼餅皮模型,冷藏6小時以上
- 取出脫模切片,刨上些許檸檬屑或舖上略酸的新鮮水果,享用
